I’m with you. But I really think it’s a matter of won’t vs. can’t. How in Hell is this Portland crap still in existence? Can’t make it better or won’t. I like to think I cook all the above pretty dang well too. Of all of them, the brisket is the biggest challenge, but I love the process. Lots of time to drink a “couple” beers.
