Ancelet's makes a jalepeño and a jalepeño/cheese deer sausage that is great. There are no chuncks of jalepeño in it but you get the flavor without being overpowering. They either puree it or chop it very small and add just the right amount (IMO).

The worse deer sausage I have ever had made was in Mid-County (Nederland I think).  Don't recall the name but it was a meat market just down the street from Diver's Den Dive Shop.

2nd worse was last week at Jackson's Deer Proccesing in Crosby,Texas.

Best was in Moulton and 2nd best was in El Campo.

It would be hard for me to say without tasting ALL of the competition, So if anyone wants my opinion, I could probably make a good judgement on 2-3 lbs. I  can give you my address if interested  ;D ;D ;D

Ivy Jackson makes a really good sausage, consistent every time and his prices are good.  I enjoyed the sausage and especially the deer boudain from Zummos but getting 2 deer done can cost you a load of cash.
