So, what’s your signature dish or dishes? What do you cook that exemplifies your best or most popular dish with family & friends?

Mine:

1. Gumbo

2. Roast, rice & Gravy

3. Deep Fried Pork Tenderloin 

4. Cornbread Dressing and giblet gravy

5. Smoked ribs

6. Smoked whole hog

7. Fried fish

8. Blackened Redfish w/ lemon butter cream sauce

9. Homemade salsa

10. Crawfish pistolettes

Just a few, but ALL good! Whatcha got?

Man, I left off pinto beans, but it’s one of mine  too! Do you put sausage or ground meat or anything else in your beans? 

That’s a good list! I love smoked ribs. They’re finicky. But I love to cook / eat them.

For me its gotta be fried turkey and cornbread dressing. I've been doing it for 15 years, and I'm kinda famous for it. Many times friends, neighbors, and coworkers bring me a thawed turkey and I cook for them as well. I've even traveled with my setup and cooked for relatives that have no idea how good it can be. Last year, my friend bought one from a local restaurant just to compare. They said never again, of course I don't charge. 

I also make a "Triple pork attack" tenderloin. Stuffed with boudin dip and wrapped with bacon. Smoked on the grill with pecan. Some people like apple sauce, but I slice up some peaches, sprinkle with cinnamon brown sugar and grill them as well. It's like cobbler without the cob. Put on top of blue bell vanilla. Its heaven in yo mouth. Lol

That’s a good list! I love smoked ribs. They’re finicky. But I love to cook / eat them. 

Only sausage in mine. I have a friend that does ground meat and a ham hock.

... anasazi beans (probably best beans on the planet)

In my mind, I know how to cook just about everything in the planet. But I’ve never had Anasazi beans. Where do you get them?

Other things as well but those are my favorite things to break out for company. 

I like to think I cook all the above pretty dang well too. Of all of them, the brisket is the biggest challenge, but I love the process. Lots of time to drink a “couple” beers.

Gonna get some repeats here. My wife is the cook, I specialize in gumbo and etouffe.

Pintos and sausage/hock, rice and cornbread.

pork/beef roast, rice and gravy, broccoli

burgers and fries (potatoes cut flat and deep fried)

finger food for company sometimes

chalupas....I should have been born a mexican

I’ll think of some more. Right now I have to go eat.

Drinking beer is one of the main requirements for cooking good food! 😂😂😂
